Walnut Crusted Pork Loin
1.5 lbs pork loin, trimmed (or pork tenderloin)
1 tbsp. ground mustard
1/2 tbsp. paprika
1/2 tbsp. garlic powder
1 tsp. salt
1 tsp. black pepper
1/2 cup walnuts, finely chopped
Step #1
Preheat oven to 350 degrees for convection oven, otherwise 375. Pat dry pork. Split lengthwise if using pork loin.
Step #2
Blend all ingredients from mustard to walnuts. Evenly coat pork on all sides.
Step #3
Roast on a foil-lined baking sheet for 18-20 minutes. Use your meat thermometer and roast to 145 degrees.
Step #4
Let meat rest for 5 minutes before slicing. Meat should be slightly pink.

Hi I am on Whole30, just finished Day 2. I had this for lunch. It was a little dry, but very tasty, loved the seasoning. I will definitely be making this recipe again.
