Tomato Sauce

PREP TIME: 15 Minutes
COOK TIME: 1 hour
TOTAL TIME: 1 hour 15 minutes
YIELD: About 3 cups
INGREDIENTS:
1 tablespoon cooking fat
1 onion, finely chopped
2 celery stalks, finely chopped
1 carrot, peeled and finely chopped
2 cloves garlic, minced
1 can (28 ounces) of crushed tomatoes or substitute with about 6 fresh tomatoes
1 teaspoon fresh thyme
1 teaspoon fresh oregano
1 bay leaf
1 teaspoon salt
1 teaspoon black pepper
DIRECTIONS:
STEP #1
HEAT the cooking fat in a large pot over medium heat. Once heated, add onion, celery, and carrot, then cook, stirring until onion becomes translucent which should be about 10-12 minutes. Add garlic and stir until aromatic, about 1 minute. Add tomatoes, thyme, oregano, bay leaf, salt, and pepper.
STEP #2
REDUCE the heat to a simmer, cover, and cook over low heat, stirring every 10 minutes, until the sauce is thick and smooth, about 1 hour. Discard the bay leaf.
STEP #3
STORE in the refrigerator for about 5 to 7 days.

This states it yields about 3 cups, but how many servings is that? Is a serving a 1/2 cup or 1 cup? Also, can you answer this about the Whole30 Salad dressing recipes in the book. I don’t want to be eating too big of a serving. Thanks!
