#HOWICOOK Recipe - Breakfast Scramble

HOW I COOK - A RECIPE SERIES WITH CHEF RICHARD BRADFORD #HOWICOOK

Breakfast Scramble

Serves 1
Prep Time: 10 min
Cook Time: 10 min

2-3 tbsp. cooking fat (bacon, olive oil, coconut oil)
¼ cup sweet potatoes, small dice
¼ cup onion, chopped finely
¼ cup broccoli, cut to medium dice size chunks
¼ cup bell peppers, small dice
2-3 eggs, beaten and seasoned s&p
¼ avocado, diced
2 leaves basil, ribboned
Salt & Pepper
½ apple, sliced

STEP #1

Over medium heat, coat bottom of omelet pan or skillet with 2 tablespoons of cooking fat.

 

STEP #2

Add sweet potatoes and sauté for 2 minutes. Add onions and continue to cook. Add remaining ingredients through bell pepper in batches. Test sweet potatoes and broccoli to ensure they are fully cooked. Add additional fat if vegetables look dry. Add eggs and cook quickly. Scrape bottom of pan to prevent eggs from browning. Total cooking 8-10 minutes

STEP #3

Mix in avocado, basil then season with S&P. Serve with sliced apple and more coffee.
