Recipe: Roasted Red Pepper Chicken
Roasted Red Pepper Chicken
1 lb chicken breast
3 oz of roasted red peppers
1/2 small yellow onion
2 garlic gloves
1 tsp salt divided
1/8 tsp red pepper flake (optional)
drizzle of olive oil
Drizzle olive oil, red pepper flake and half of the salt over chicken breast and grill chicken until internal temperature reaches 160 degrees. Place onion and garlic on grill to slightly char while chicken is cooking
Blend remaining salt, red peppers, onion and garlic in a blender or food processor.
Drizzle red pepper sauce over chicken and enjoy!
