AIP Turkey Meatballs in Pesto Sauce
Ingredients
1 # ground turkey
1 tsp garlic powder
1 tsp onion powder
2 tsp Italian herb blend
1 tsp salt
2 cups of spinach- raw
3/4 oz fresh basil leaves
2 garlic cloves
1/2 cup olive oil
1 tsp salt

Step #1
Preheat Oven to 350 degrees
Blend garlic powder, onion powder, Italian herb blend and salt. Add it to the ground turkey and mix, roll meatballs into 1 oz balls (approximately 16).
Step #2
Roast in a 350 degree oven for 12-14 minutes or until internal read thermometer reaches 160 degrees.
Step #3
While meatballs are roasting, place remaining ingredients in a blender starting with the oil, blend until smooth.
Step #4
Toss the meatballs in the pesto sauce and serve over a bed of spaghetti squash or cauliflower rice.
